Two things, both on the label: ascorbic acid, which is vitamin C, and citric acid, the acid in lemons. Together they keep cut apple from browning. No sugar and no oil.
Dehydrating cooks the water out with heat, which is why dried fruit turns chewy and dark. Freeze-drying freezes the fruit and pulls the water off as vapor, so the shape, color, flavor and vitamins stay put and every piece turns light and crisp.
Sealed, months in the pantry. Opened, eat within a few days for the best crunch; it softens as it takes on air.
