  • 1 (9-inch) graham cracker crust, store-bought or homemade
For the custard

  • 2 cups reconstituted Powdered Vitamin Milk (about 4 Tbsp powder plus 2 cups water)
  • ½ cup heavy cream
  • ½ cup granulated sugar
  • ¼ cup cornstarch
  • ¼ tsp salt
  • 3 large Powdered Vitamin Eggs, reconstituted (about 6 Tbsp powder plus ½ cup water)
  • 2 tsp pure vanilla extract
  • 2 Tbsp Powdered Vitamin Butter, reconstituted (2 Tbsp powder plus 1 tsp water)
For the topping

  • 1 cup heavy whipping cream
  • 2 Tbsp powdered sugar
  • 1 tsp vanilla extract
  • Extra rehydrated banana slices for garnish (optional)

Instructions

  1. Get everything ready first. Rehydrate the banana slices in cool water for 5 minutes, then drain well and pat them dry. Have your 9-inch graham cracker crust ready; if it's homemade, press it firmly into the pan and chill it. In separate small bowls, reconstitute the Vitamin Milk, Vitamin Eggs, and Vitamin Butter to the amounts above so they're on hand when you need them.

  2. Start the custard. In a medium saucepan, whisk together the 2 cups reconstituted Vitamin Milk, heavy cream, sugar, salt, and cornstarch. Cook over medium heat, whisking constantly, until it thickens and just begins to bubble.

  3. Temper the eggs. Put the reconstituted Vitamin Egg mixture in a separate medium bowl. Drizzle in about ½ cup of the hot milk mixture while whisking hard. This warms the eggs slowly so they don't scramble.

  4. Finish the custard. Pour the tempered eggs back into the saucepan. Keep cooking and whisking until the custard is very thick and smooth, like pudding, and pulls away from the sides of the pan.

  5. Add the flavor. Off the heat, stir in the vanilla and the reconstituted Vitamin Butter until the butter melts in completely.

  6. Build the pie. Lay half the banana slices in a single layer over the chilled crust. Pour half the warm custard over them and spread it even. Add the rest of the banana slices, then the rest of the custard, and smooth the top.

  7. Chill until firm. Press plastic wrap right onto the surface of the custard so no skin forms. Refrigerate at least 2 to 4 hours, overnight if you can, until it's set and cold through.

  8. Top and serve. Just before serving, whip the heavy cream, powdered sugar, and vanilla in a chilled bowl until soft peaks form. Spread it over the pie and garnish with a few extra banana slices.


A few things that make the difference

  • Cook the custard until it's genuinely thick. A runny slice almost always means the custard came off the heat too soon. Keep whisking until it's pudding thick before you stop.
  • Cover the bananas with custard when you layer. It keeps them from oxidizing and holds the texture.
  • You can assemble the whole pie, crust through custard, and chill it overnight. Add the whipped cream right before serving so it stays light.
  • For clean slices, dip the knife in hot water and wipe it dry between cuts.
