A strawberry parfait you can build in seven minutes from the pantry

A fast breakfast usually means giving something up. Speed or nourishment, pick one. This parfait doesn't ask you to choose. You build it in about seven minutes, no cooking, and most of what goes in it comes off the shelf.

It's a plain idea done well. Yogurt on the bottom, granola for crunch, rehydrated strawberries on top, a few hemp hearts and a little honey. What makes it work any month of the year is the fruit. The strawberries come from a can, not the produce aisle, and they taste like summer either way.

Why the pantry version holds up

The whole thing runs on shelf-stable ingredients that still taste like the real thing.

  • Freeze dried strawberry slices give you ripe-strawberry flavor with no waiting for the season. They carry Vitamin C, fiber, and antioxidants, and they come back to life in about five minutes in water. Sweet, a little tart, bright red.
  • The rest is honest food. Greek yogurt brings protein and probiotics and keeps you full. Granola adds the crunch and some whole-grain fiber. Hemp hearts fold in Omega-3s and a bit more plant protein.

Strawberry power parfait

Makes one serving. Ready in about 7 minutes. No cooking.

Ingredients

  • 1 cup unsweetened Greek yogurt
  • 1/3 cup Freeze Dried Strawberry Slices
  • 1/3 cup of your favorite store-bought granola
  • 1 tablespoon hemp hearts
  • 1 to 2 teaspoons honey, to taste

Instructions

  1. Put the strawberry slices in a bowl and cover them with water. Let them soak 5 minutes until they're juicy, then drain them well.
  2. Spoon the yogurt into a bowl or glass. Add the granola for crunch, then lay the rehydrated strawberries on top.
  3. Sprinkle the hemp hearts over everything for the healthy fats and a little more protein.
  4. Drizzle the honey over the top for sweetness.
  5. Eat it right away, while the granola is still crisp and the berries are still juicy.

A few ways to change it up

  • For a richer, higher-protein yogurt, stir in a splash of prepared Powdered Vitamin Milk.
  • Swap the strawberries for Freeze Dried Blueberries or Banana Slices and you've got a different breakfast.
  • Layer it in a mason jar the night before and it travels. Good for a car ride or a desk drawer.

The point of it

Keep a can of strawberries on the shelf and a good breakfast is never more than a few minutes away, in February the same as July. Next time the morning gets away from you, reach for the Freeze Dried Strawberry Slices and build the bowl.
