Creamy Lemon Parmesan Spaghetti with Peas Recipe
Weeknight pasta has a way of turning into a project. You buy the fresh peas, they sit in the crisper, and by the time you get to them half are past their prime. Then the cream in the fridge is two days short of the date. I got tired of that math.
This version takes about 25 minutes, and the parts that used to spoil on me now come off the shelf. The peas rehydrate while the water heats. The sauce leans on butter and milk from the pantry, with olive oil, lemon, and grated Parmesan doing the rest. It comes out bright and creamy, and it does not curdle if you keep the heat low.
The pantry-powered advantage
Three shelf-stable pieces carry this dish. our Freeze Dried Green Peas soak in warm water for about 5 minutes and come back plump and sweet. They hold their shape in the sauce instead of going to mush, which fresh peas do if you look at them wrong. The Powdered Vitamin Butter stirs into a soft spread with a splash of water, and it melts into the sauce the same way a stick would. It carries the fat that keeps everything smooth. The Powdered Vitamin Milk mixes into liquid in seconds and gives the sauce body, no carton clock running on something you opened last Tuesday.
The Parmesan and lemon here are fresh from the store. This dish needs them sharp, and I am not going to tell you otherwise.

Creamy lemon Parmesan spaghetti with peas
Serves 4. Total time about 25 minutes.
Ingredients:
- 12 oz spaghetti
- 1 cup Freeze Dried Green Peas
- 2 Tbsp Powdered Vitamin Butter plus 1 tsp water
- 2 Tbsp Powdered Vitamin Milk plus 1 cup water
- 3 Tbsp olive oil
- 1 cup grated Parmesan, plus more for serving
- Zest of 1 lemon
- 3 Tbsp fresh lemon juice (about 1 lemon)
- 2 cloves garlic, minced (optional)
- Salt and black pepper to taste
Instructions:
- Rehydrate the pantry items. Soak 1 cup Freeze Dried Green Peas in warm water for 5 minutes, then drain thoroughly. Stir 2 Tbsp Powdered Vitamin Butter with 1 tsp water into a soft butter. Whisk 2 Tbsp Powdered Vitamin Milk into 1 cup water until smooth.
- Boil the pasta. Bring a large pot of salted water to a boil and cook the spaghetti until just short of tender, about 1 minute under the package time. Before you drain it, save 1 cup of the pasta water.
- Start the sauce. In a wide skillet over medium heat, warm the olive oil and the softened butter. If you are using garlic, add it now and cook until fragrant, about 30 seconds. Do not let it brown.
- Build the cream. Pour in the milk and lower the heat to medium-low. Let it come to a bare simmer, then whisk in the Parmesan a handful at a time until it melts. This is the fiddly part. Add the cheese slowly and keep the heat low, or it will clump.
- Add lemon and peas. Stir in the lemon zest and juice, then the drained peas. The sauce will tighten from the lemon, so loosen it with a splash of the saved pasta water.
- Toss and finish. Add the drained spaghetti and toss over low heat for about 1 minute, adding more pasta water a little at a time until the sauce coats every strand. Season with salt and plenty of black pepper. Serve with extra Parmesan.
Tips for creamy lemon Parmesan spaghetti with peas success
- Make the sauce ahead and keep it in the fridge for two days. Rewarm it low and slow with a splash of water, since it thickens as it sits.
- Leftovers reheat best in a skillet with a spoonful of water, not the microwave, which breaks the sauce.
- For a heartier plate, fold in shredded cooked chicken or white beans with the peas.
- A pinch of red pepper flakes with the garlic gives the lemon something to push against.
The Final Take: bright pasta, quiet pantry
The Freeze Dried Green Peas, the Powdered Vitamin Butter, and the Powdered Vitamin Milk do the work off the shelf, and the fresh lemon and Parmesan do the finishing. Keep those on hand and this is a dinner you can make on a night you did not plan to cook.
