Banana walnut bread from the pantry shelf

Instructions
1. Rehydrate the pantry ingredientsBring the three shelf-stable ingredients back to life first.
- Bananas: soak the freeze-dried slices in warm water about 5 minutes, then drain well and mash.
- Eggs: whisk ¼ cup Powdered Vitamin Eggs with ⅓ cup water until smooth.
- Butter: stir 4 Tbsp Powdered Vitamin Butter with 2 tsp water until it's a smooth, softened butter. That's about ¼ cup.
Heat the oven to 350°F. Grease a 9x5" loaf pan so the bread comes out clean.
3. Mix dry and wet separately
- In a large bowl, whisk together the flour, sugar, baking soda, salt, and cinnamon.
- In another bowl, whisk the egg mixture, rehydrated butter, vanilla, and mashed bananas until combined.
- Fold the wet mixture into the dry just until moistened. Stop there. Overmixing makes it tough.
- Stir in the chopped walnuts.
- Pour the batter into the pan and scatter the extra walnuts on top.
- Bake 50 to 60 minutes. It's done when the top is golden brown and a toothpick in the center comes out clean.
Let the loaf sit in the pan 10 minutes, then move it to a wire rack to cool all the way. Cutting it warm is tempting. Waiting gets you clean slices.

- A dash of nutmeg or ¼ tsp cloves adds depth if you want more spice.
